It all started with a soccer tournament! We had a soccer tournament this past weekend, and with early games, we were unsure if the hotel was going to have breakfast ready in time for our girls to eat and get to the field. So at the last minute, one of our team moms formulates a back-up plan, and hard-boiled eggs were a part of it. Of course, as all planned things go (not as planned) we had quite a few hard-boiled eggs left over, so I took some home, and as I was unpacking last night, I decided these would be great for deviled eggs and/or egg salad. So here we are with the best truffle deviled eggs!

Deviled Eggs are always a hit at every party I go to! I swear they always run out first. It doesn't matter if there are 24, 48, or even 240 egg halves, they've all disappeared by the end of the night! Some people like to get fancy with deviled eggs, which can be great, but I like to keep it simple. Therefore, I bring you a super easy and simple recipe, that will take your traditional deviled egg to the next level!

Ingredients
-
6 eggs
-
3 tbsp mayonnaise
-
1 tbsp fresh chives, finely chopped
-
1 tsp yellow mustard
-
1/2 tsp Truffletopia Black Truffle Sauce
-
1/4 tsp ground pepper
Directions
Hard Boil Eggs (I prefer to use an Instant Pot for these, with a 5 minute cook time, transferring them to an ice water bath afterword, and they peel perfectly every time)
Vertically cut eggs into halves, and scoop the yolks out into a small mixing bowl. Set the egg whites aside. (I use a very sharp knife and an iced tea spoon to accomplish this step quick and painlessly)
Add mayo, chives, yellow mustard, Truffletopia Black Truffle Sauce, and pepper to the bowl, and mix. (I press on the the egg yolks to break them up and mix it well)
Spoon or pipe the egg yolk mixture into the egg whites. (You can sprinkle a tiny bit of paprika for garnish if you wish)
