Mashed Potatoes are a fan favorite! Mashed potatoes are also a favorite complement to truffles! I used our White Truffle Sauce in these, but our other sauces can be great substitutes!

Mashed potatoes is one of the most common side dishes you will find in American restaurants, and it is a common side dish during holidays in American homes. Here is a classic, simple recipe for mashed potatoes with a flare of white truffles. For this recipe I used red potatoes.

Ingredients

3 lbs red potatoes, cleaned

1 stick (4 oz) unsalted butter

3 tbsp Truffletopia White Truffle Sauce

1 cup milk

1 scallion shoot, chopped finely

Fresh ground pepper, to taste

sea salt, to taste
Directions
Clean potatoes and cut into 2 inch cubes.
Bring potatoes, in a large pot over a medium high heat, to a boil.
Add 1/8 teaspoon of salt to the water, and continue boiling until potatoes are tender, about 25 minutes.
With about 5-10 minutes left on the potatoes, in a small sauce pan on low heat, add milk, Truffletopia White Truffle Sauce, and butter. Stir occasionally until butter is melted. Turn heat off after butter is melted.
Drain the potatoes and return to the large pot.
Mash the potatoes, to desired texture adding the milk and truffle sauce mixture.
Add desired amount of salt, pepper and scallions. Be sure to not over season with any of these ingredients as you want the truffle to be the star of the dish.
